Recipe Group- Breakfast


Migas Mexicana
serves 4

I really enjoy whipping this up during the week. It is quick and delicious. And you can make it spicy if you want, by adding salsa in there on the very last step!
8 tortillas

4 eggs

1/4 cup cheese

2 tbsp veggie oil

salt

pepper


1. Heat oil. Cut tortillas into 2 inch strips. Fry in oil until golden brown. At this point is where I like to add the salt and pepper. Drain on paper.


2. Return tortilla strips to heat. Add eggs and mix. Plate and then add cheese.


**For a simpler shortcut, I have bought tortilla strip chips and crunched them a bit and just went on to step two.


You can garnish with avocado, salsa!
